Honey Cakes

Hecate Honey Cakes

1 stick butter
4 cups flour
1/4 tsp salt
Grated rind of orange
1(1/2) baking powder
2 egg yolks
1 egg white
1 cup milk
3 tbs superfine sugar
2 tbs honey

Cut the butter into the flour, salt, orange zest, and baking powder. Beat the two egg yolks and one egg white with the milk. Heat sugar and honey, stirring until well mixed. Stir wet ingredients in the dry mixture and turn out on a floured board. Roll lightly to half-inch thickness. Cut out 2-inch rounds or ovals. Place on a greased baking sheet and bake in oven preheated to 400 degrees F for 20 minutes. Remove to a rack and reduce oven heat to 250 degrees F. Pour topping (one cup of flavourful honey) over the hot cakes and sprinkle three tablespoons of ground, blanched almonds. Place rack of cakes in the cooler oven for five minutes or until set.
